Ingredients:
4 Medium Whiting, trimmed, gutted and
Olive oil For the stuffing
6 tbsp Fresh White Breadcrumbs
1 level teasp Dried Mixed Herbs
1 level tbsp Fresh Parsley, chopped
Salt and Black Pepper
1 level tbsp Finely chopped Onion
A few drops of Anchovy Essence
1 small Egg, beaten
Instructions
1. Preheat the oven to 200C, 400F, Gas mark 6 and lightly grease a shallow ovenproof dish.
2.
Place the stuffing ingredients in a large bowl and mix until well blended.
3. Stuff the cavities of each fish with the stuffing mixture and close the openings and secure with toothpicks or sew up with thread.
4. Place the fish in the ovenproof dish, drizzle with olive oil and cover with foil and bake for 30 minutes or until cooked through.
5. Serve immediately being sure to warn diners of the cocktail stick or thread.
