Swordfish with Ginger HT MC 20mins plus marinating Serves 4 Hot Fish Alcohol Main Course Healthy Eating Gluten Wheat Dairy Free Eggless
Ingredients 3 tbsp Olive Oil The grated zest and rind of ½ a Lemon 1 tbsp Dry sherry 1 tbsp Light Soy Sauce 2 Garlic Cloves, crushed 2.5cm/1 inch Root Ginger, grated ½ teasp Ground Ginger Black Pepper 4 Swordfish SteaksInstructions 1. Place 2 tablespoons of the oil, the lemon rind and juice, sherry or water, soy sauce, garlic, pepper and ginger in a bowl and mix well.
2. Lay the swordfish steaks in a shallow dish in a single layer. Pour the marinade over the steaks and turn to coat well. Cover and refrigerate for 2 hours.
3. Heat the remaining oil in a frying pan. Lift the swordfish steaks out of the marinade and fry them over a moderate heat for 4 minutes on each side. Transfer to a heated serving dish and pour the pan juices over them. Serve hot.
