Trout with Almonds HT MC 25mins Serves 4 Hot Fish Nuts Main course Eggless
Ingredients: 4 trout Flour seasoned with salt and pepper 175g/6oz Butter 50g/2oz blanched Almonds, cut in slivers Juice of ½ a Lemon Lemon Wedges to garnish
Instructions
1. Clean and dry the fish, but leave the heads on. Coat with seasoned flour.
2. Melt 100g/4 oz of the butter in a large frying-pan and fry the fish two at a time, for 12-15 minutes turning them once, until they are tender and golden on both sides. Drain and keep warm on a serving dish.
3. Clean out the pan and melt the remaining butter; add the almonds and heat until lightly browned then add a squeeze of lemon juice and pour over the fish. Serve at once, with wedges of lemon.
