Trout stuffed with Coriander HT MC 40mins Serves 4 Hot Fish Nuts Dried Fruit Main Course Eggless
Ingredients 50g/2oz Fresh White Breadcrumbs 100g/4oz ready to eat Dried Apricots, finely chopped 4 tbsp Fresh Coriander, chopped 75g/3oz Shelled Pistachio Nuts, chopped 50g/2oz Melted Butter Salt and Pepper 4 Whole Trout, cleaned and gutted
Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4.
2. Place the breadcrumbs, apricots, half the coriander, pistachio nuts, half the butter , salt and pepper in a bowl and mix well.
3. Place each trout on a large sheet of buttered foil. Spoon half the stuffing inside each trout cavity. Brush with the remaining melted butter and enclose the foil around each one to form 4 parcels. Place on a baking tray and bake for 25-30 minutes.
4. To serve - remove from the foil onto a warmed serving platter and serve immediately.
