Fish Main Course
Healthy Eating Dairy Gluten Wheat Free Eggless
4 x 100g/4oz
4 Pieces Banana Leaves (about
25cm/10 inch square)
1 teaspoon Cumin Seeds
2 Garlic Cloves, very finely
4 Kaffir Lime Leaves, or the
grated zest of 2 Limes
Grilled lime slices to garnish.
Sesame Oil to serve
1. Grind the cumin seeds coarsely. Season
the halibut pieces on both sides with salt and pepper.
2. Place each fillet in the middle of a
banana leaf and sprinkle with garlic, and cumin seeds. Top with a lime leaf or
grated zest. Wrap the banana leaf around the fish to form a parcel and secure
with fine string.
If you can't get banana leaves use greaseproof or parchment paper or oiled
for about 7-8 minutes or until cooked through.
4. Meanwhile, grill the Lime slices until
serve - transfer the parcels to serving plates. Garnish with the grilled lime
slices and serve immediately drizzled with warm Sesame oil.
