Halibut is a species of "righteye" flounder belonging to the family Pleuronectidae and is the largest of all flatfish which can grow up to 3m/9feet in length and 320kg/145lb in weight although the average weight is about 13kg/30lb. They are a seawater (marine) fish found in the North Pacific and the North Atlantic oceans.   Classed as a "white" fish, they have a dense firm white flesh with a good clean flavour and a smooth skin. Unfortunately, over-fishing, exacerbated buy the fact that they are slow growing,  in the Atlantic has put Halibut in this area on the endangered list so today, most commercially caught Halibut is Pacific Halibut.

 

Suitable substitutes for halibut include sole, flounder and turbot.
