Monkfish belong to the family Lophiidae, species of which can be found in the Atlantic Ocean, Mediteranean Sea and other North European waters. Sometimes called anglerfish, its body is composed mainly of a huge mouth  attached to a muscular tail. Quite a large fish, it can grow to over  5 ft although specimens of 3 ft are more common.  Classed as a "white" fish, the only edible portions of the monkfish is the tail which has a dense firm texture and sweet flavour, both of which are often compared to that of lobster.

Suitable substitutes for monkfish  include  meaty fish such as swordfish and halibut.
