Grey and red mullet belong to the families Mugilidae and Mullidae. It should be noted that they aren't related to each other although they can be substituted for each other in recipes. Both are round bodied seawater (marine) fish found worldwide mainly in coastal temperate and tropical waters although some species can be in fresh water. Although classed as white fish the firm textured flesh is actually quite oily. Red mullets get their colouring from their diet of small crustaceans.
Suitable substitutes for mullet include Orange Roughy and sea bass
