They are a seawater (marine) fish found in the European shelf from the Barents Sea to the Mediterranean, North Pacific and North Atlantic. Classed as an "White" fish, they have a mild sweet flavour and soft texture and can reach sizes up to 70cm/28 inches though many are sold at around 30cm/12-inches. Often considered as the poor man's Sole, they are a popular fish in parts of Europe often filleted, battered or bread crumbed and fried however they make a very good substitute in sole recipes.
Suitable substitutes for plaice include Dab, Flounder, Sole.
