Snapper belong to the family of perciform fish. The are mainly a seawater fish although some members live in estuaries. One of the best known varieties relatively easily available is red snapper. The red snapper, Lutjanus campechanus,  is found off the Atlantic and Pacific coasts of The Americas and the Gulf of Mexico. Although Red snappers will eat almost anything, they prefer small fish and crustaceans and studies have shown that shrimp is what gives red snapper its colouring.  A prized culinary "white-fish", commercially sold snappers are mainly caught on multi-hook gear due to gillnetting having been banned in certain fishing waters.

 

Suitable substitutes for snapper include sea bass,  catfish, cod.
