Scallops are saltwater (marine) bivalve molluscs belonging to the family Pectinidae  found in oceans worldwide and are a highly prized  food in many countries.  Each shell contains two types of meat - the actual scallop which is in fact the muscle which closes the shell  and the bright orange roe called "coral". Although they are often sold and served without the roe, it is perfectly edible and is considered a delicacy by many chefs and home cooks alike and are a favourite for serving as a starter.
