Foil Baked Ginger Chilli Salmon Recipe

A light starter of fresh salmon flavoured with ginger, spring onions and chilli and baked in a parcel. The use of sweet chilli sauce gives the finished dish a warm chilli flavour rather than fiery hot.

2.5cm/1-inch piece of fresh Root Ginger, grated
4 Spring Onions, sliced on the diagonal
1 Garlic Clove, crushed
2 tbsp Soy Sauce
2 tbsp Sweet Chilli Sauce
Vegetable Oil for greasing
2 Fresh Salmon Fillets (about 175g/6oz each), halved
2 tbsp roughly chopped Fresh Coriander



1. Preheat the oven to 200C, 400F, Gas Mark 6. Place the ginger, onions, garlic, soy sauce and chilli sauce in a small saucepan and heat gently, stirring for 2-3 minutes. Remove from the heat and set aside. Alternatively, place in a small bowl and microwave for 30 seconds or until quite hot.

2. Take 4 pieces of foil about 30cm square/diameter and lightly oil leaving a 7.5cm/3-inch border all the way around. Place a salmon steak half in the centre of each piece of foil, spoon some of the ginger mixture over each and sprinkle with coriander.

3. Pull up the edges of the foil and fold over to create a completely sealed parcel, making sure you leave plenty of space around the fish, then place the parcels on a baking tray and bake for 10 minutes. Serve immediately with some crusty bread.

You can fold the parcels into any shape you like – round, square, oblong, triangle


You can use parchment paper instead of foil


If you want more heat, add some finely chopped chillies
