Piquant Gorgonzola Salad

Serves 4 Cold Fish

4 large Tomatoes, sliced
1 tbsp Balsamic Vinegar
2 tbsp Good Quality Olive Oil
100g/4oz Gorgonzola cheese, crumbled
1 heaped tbsp Capers, drained
4 Spring Onions, thinly sliced
4 Preserved Anchovy Fillets, drained and finely chopped
8 Fresh Basil Leaves, shredded
1. Arrange the sliced tomatoes on 4 small plates.
2. In a small jug or bowl, lightly mix together the vinegar, oil and black
pepper then drizzle evenly over the tomatoes.
3. Sprinkle the cheese, capers, onions, and anchovies evenly over the
tomatoes and garnish with the shredded basil leaves.
