Prawn & Grapefruit Cocktail CD HD 15mins plus cooling Serves 4 Cold Shellfish Seafood Herbs Alcohol Fruit Hors d'oeuvre Starter Appetizer
Ingredients 150g/6oz Peeled prawns 1 heaped tbsp, finely chopped Onions 3 tbsps, finely chopped Parsley 1 teasp Lemon juice 2 teasp White wine 3 tbsp Olive oilSalt and pepper 3 Grapefruit 4 tbsp Mayonnaise 8 drops Tabasco Sauce Lettuce Paprika 4 Black Olives, pitted 1 Tomato quarteredInstructions 1. Put prawns in a pan with the finely chopped onion, parsley, lemon juice, white wine and olive oil. Season with Salt and pepper to taste. Cook until sizzling then remove from heat and leave to get cold. 2. Meanwhile, peel the grapefruit and divide into segments. 3. When the prawn mixture is cold, drain thoroughly and combine with the grapefruit, mayonnaise and Tabasco. Chill. 4. Serve on a bed of lettuce, on small plates or in stemmed glasses. Sprinkle with paprika and garnish with tomato quarters and black olives.
A delicious light starter suitable for dinner parties or at Christmas, Easter and other holiday festivals.
