Bagna Cauda HT HD Italian 20mins Serves 4 Hot Fish Vegetables Hors d'oeuvre Starter Appetizer Gluten Wheat free Italy Europe
Ingredients: 3 x 50g/2oz tins of Anchovy Fillets 150g/5oz Butter 5 Cloves Garlic, finely sliced 210ml/7 fl.oz. Good quality Vegetable Oil An assortment of Raw vegetables e.g. Red, Green and Yellow Capsicums Celery Cauliflower Carrots Spring Onions Cucumber
Instructions
1. Drain the anchovies and place in a bowl of water. Soak while you prepare the vegetables.
2. Wash and trim the vegetables and cut into pieces large enough to be held and dipped. Arrange on a large plate and refrigerate until ready to be used.
3. Melt the butter in a pan, add the sliced garlic and fry gently without browning.
4. Mash the anchovies well and add to the butter and stir in the oil. Cook for 10 minutes stirring all the time.
5. To serve - transfer the hot anchovy sauce to a serving bowl place it in the centre of the platter containing the vegetable pieces. Serve as a starter.
