Cucumber and Prawn Salad CD HD 15mins Serves 4 Cold Shellfish Seafood Hors d'oeuvre Appetizer Starter
Ingredients: 225g/8oz Prawns, peeled 1 Cucumber 2 tbsp Lemon Juice 150ml/5 fl.oz. Mayonnaise 2 tbsp Tomato Ketchup 5 tbsp Double Cream 3 tbsp Green Capsicum, diced Salt and Pepper A dash of Tabasco Sauce 2 tbsp Fresh Parsley, chopped
Instructions
1. Peel the cucumber, cut in half lengthways. Using a small spoon, scoop out and discard the seeds. Cut the seeded cucumber into chunks about 25 mm/1 inch thick, then cut each slice lengthways again into 6 mm/ ¼ inch strips.
2. Sprinkle the strips with salt and lemon juice and chill in the refrigerator for 10- 15 minutes.
3. In a medium-sized mixing bowl, combine the mayonnaise, ketchup and cream and blend thoroughly.
4. Stir in the diced green pepper, prawns and drained cucumber slices and toss. Season to taste with salt, freshly ground black pepper and Tabasco.
5. Pile the salad on to a serving plate, sprinkle over the parsley and serve as a starter.
