Heat the oil in a deep-fryer to 190C, 375F and preheat the oven to 180C, 350F,
Gas mark 4.

paper then coat with the seasoned flour, shaking them to get rid of the surplus

should be slightly coloured but not too brown.

the fish with the spoon, drain for a few seconds, then turn the whitebait
on to kitchen paper to drain. Keep them hot in the oven. Repeat with successive
batches of whitebait, making sure that the oil had reached the right temperature
before adding each new batch.
