Fried Whitebait HT HD 15mins Serves 4 Hot Fish Hors d'oeuvre Appetizer Starter Dairy free Eggless
Ingredients: 1kg/2lb Whitebait Seasoned Flour Oil for deep frying Lemon Wedges to serve
Instructions
1. Heat the oil in a deep-fryer to 190C, 375F and preheat the oven to 180C, 350F, Gas mark 4.
2. Place the whitebait (whole) in a colander and wash under cold running water. Drain and dry them on kitchen paper then coat with the seasoned flour, shaking them to get rid of the surplus flour.
3. Fry in batches for 1-2 minutes only. They should be slightly coloured but not too brown.
4. Lift out the fish with the spoon, drain for a few seconds, then turn the whitebait on to kitchen paper to drain. Keep them hot in the oven. Repeat with successive batches of whitebait, making sure that the oil had reached the right temperature before adding each new batch.
4. Sprinkle the cooked fish lightly with cayenne pepper. Serve immediately with lemon wedges as a starter.
