Maquereaux a la Provencal HT HD French 40mins

Ingredients

Medium Onions, thinly sliced
350g/12oz
Tomatoes, finely chopped

tbsp Olive Oil
1
teasp Dried Thyme
1
Bay Leaf
Salt
and Black Pepper
4
small Mackerel, gutted and trimmed

Lemon

tinned Anchovy Fillets
8
Black Olives Freshly chopped Parsley to garnish
Instructions
1.
Preheat the oven to 200C, 400F, Gas mark 6 and grease a shallow ovenproof dish.
2.
Heat the oil in a pan, add the onions and sauté until soft and transparent then
add the tomatoes, thyme,
bay leaf, salt and pepper and cook over a medium heat for 10 minutes stirring
from time to

Transfer the tomato mixture to the greased ovenproof dish then place the
prepared mackerel on top,
having seasoned them inside and out with salt and pepper.

Cover with a lid or aluminium foil and bake in the oven for 15-20 minutes until
the fish are tender.
5. Meanwhile, slice the lemon then halve each slice and roll up each anchovy fillet.
6. To serve - garnish the fish with the rolled anchovy fillets, lemon slices and black olives. Serve immediately.
