tbsp dry White wine
tbsp Tomato Ketchup
tbsp Single Cream
tbsp Medium Sherry
small Lettuce, shredded
Sprinkle the prawns with the wine and leave for half an hour stirring from
time to time to thoroughly coat each prawn.
Make a sauce by combining the mayonnaise, ketchup, cream and sherry and
season with the salt, pepper and cayenne.
Divide the lettuce between four small dishes and place the prawns on top.
Just before serving, spoon the sauce over the prawns and garnish with lemon
