Gruyère
is a Swiss semi-hard cows' milk cheese made from unpasturised milk, and gets its
name from the town of Gruyères in Switzerland. Young Gruyere has a dense smooth
texture sometimes with the occasional small hole, and sweet, nutty flavour
and is an excellent melting cheese, particularly suited to recipes like sauces
and fondues. When aged, it takes on a dryer more grainy texture and much fuller
flavour. It is a traditional cooking cheese in France and other European
countries, used in many recipes including soufflés, soups and
sauces. It is also a good table cheese and is often used for salads.
