Preparation time: 15 minutes
180g egg whites (about 6 eggs)
1. Place the egg whites in a mixing bowl. Set over a pan of hot water.
2. Whisk the egg whites over the water until they reach 60°C.
3. Remove the egg whites from the heat and slowly whisk in the sugar. Continue
whisking until soft peaks form. This can be done more quickly and efficiently by
transferring to an electric mixer.
