Serves   4      Hot   Vegetarian   Vegetables  Ind   Accompaniment Dairy Free 



   2 Onions, chopped

   4 tbsp Vegetable Oil

   1 Garlic Clove, crushed

   1/2 teasp Chilli Powder

   1 Bay Leaf

   2.5cm/1 inch Stick Cinnamon

   1 teasp Salt

   1/2 teasp Black Pepper

   A little Water

   450g/1lb Tomatoes, peeled and quartered

   450g/1lb Aubergines, (eggplant ) cut into large chunks

   2 tbsp Tomato Puree




1. Heat the oil in a large saucepan , add the onions and fry gently until golden brown.


2. Add the garlic, chili powder, bay leaf, cinnamon, salt and pepper together with a little water and bring to the boil stirring constantly.


3. Add the tomatoes and continue to boil for 5 minutes.


4. Add the aubergines and tomato puree, mix well then partially cover and simmer for 30 minutes until the aubergine is just tender but not too soft. Serve immediately.
