tbsp Malt Vinegar
teasp Toasted Cumin Seeds
Unripe Mango, peeled and cubed
Fresh Root Ginger, thinly sliced
Garlic Cloves, crushed
coarsely grated zest of 1 Orange
1. Place the vinegar, chilies, cloves,
peppercorns, cumin seeds, salt and sugar in a
pan, bring to the boil then simmer over a
low heat for about 15 minutes.
