3 tbsp Vegetable Oil
175g/6oz Fresh Okra, washed, topped and
4 Garlic Cloves, crushed
5cm/2 inch Piece Fresh Ginger, chopped
4 Green Chilies, sliced
1/2 teasp Turmeric
4 Curry Leaves
1 teasp Cumin Seeds
450g/1lb Shelled King Prawns
2 teasp Brown Sugar
The Juice of 2 Lemons
1. Heat 2 tablespoons of the oil in a
frying pan, add the okra and fry until lightly
browned and slightly crisp. Remove from
the pan and drain on kitchen paper.
2. Add the remaining oil to the pan and
heat until hot. Add the garlic,
the prawns, mix well and cook for 5-10
minutes until the prawns are tender.
3. Add the salt, sugar, lemon juice and
fried okra and continue to cook over a high
heat for a further 5 minutes, stirring
gently so as not to break up the okra. Serve immediately.
