Dundee Marmalade Cutlets HT

Serves 4 Hot Lamb Fruit Main Course Gluten Wheat Free Eggless Scotland British Europe
Ingredients
50g/2oz Butter
12 Lamb Cutlets
½ teasp Ground Ginger
½ teasp Paprika
Salt and Pepper
90ml/3fl.oz. Water
60ml/2fl.oz Red Wine Vinegar
4 tbsp Marmalade (check ingredients)
4 slices Fresh Orange to garnish
Instructions
1. Heat the butter in a large frying pan, add the cutlets and brown on both
sides.
2. Sprinkle the ginger, paprika, salt and pepper over the chops then add the
water and vinegar and mix.
3. Place a heaped teaspoon of marmalade on the top of each chop but don’t mix it
into the liquid. Bring to simmering point then cover and cook over a very low
heat for 45 minutes, checking once or twice during the cooking period and adding
a little more water if necessary.
Serve hot garnished with orange slices.
