Ingredients
2 tbsp Vegetable Oil

Salt

900g/2lb Lamb, cubed

4 tbsp Flaked Almonds

4 tbsp Brown Sugar
1 Cinnamon Stick

2 tbsp Fresh Orange Juice
240ml/8fl.oz. Stock or Water
12 Prunes, pitted

 

Instructions


1. Season the lamb with salt then heat the oil in a large saucepan until hot, add the lamb and brown on all sides.  Remove from the pan with a slotted spoon and set aside.

 

2. Add the almonds, sugar and cinnamon to the pan then stir in the orange juice and water and bring to the boil stirring.

 

3. Return the lamb to the saucepan, coverand simmer for about 45 minutes until tender.

 

4. Add the prunes, mix well and continue to cook for a further 15 minutes. Serve hot with couscous or rice.
