Aubergines with Minty Lamb �� HT� MC���75mins

Serves 4��� Hot��� Lamb�� Vegetables� Herbs� Main Course��� Dairy� Gluten Wheat free� Eggless

Ingredients

4 Aubergines (eggplant )

250g/9oz Lamb Fillet, thinly sliced

Salt and Black Pepper

1 Red Onion, thinly sliced

2 tbsp Fresh Mint Leaves, shredded

Olive Oil

Instructions

�

1. Preheat the oven to 20OC, 400F, Gas mark 6 and lightly grease a baking tray. Cut each aubergine lengthwise into 5 slices, but not quite right through.

�

2. Season the lamb and insert� slices into each aubergine slit, together with some onion and mint. Brush sparingly with oil and loosely wrap each one in foil.

�

3. Place the parcels on the baking tray and bake for 45 minutes to 1 hour until the aubergine is tender through to the centre. Serve immediately.
