Aubergines with Minty Lamb HT MC 75mins Serves 4 Hot Lamb Vegetables Herbs Main Course Dairy Gluten Wheat free Eggless
Ingredients 4 Aubergines (eggplant ) 250g/9oz Lamb Fillet, thinly sliced Salt and Black Pepper 1 Red Onion, thinly sliced 2 tbsp Fresh Mint Leaves, shredded Olive Oil
Instructions 1. Preheat the oven to 20OC, 400F, Gas mark 6 and lightly grease a baking tray. Cut each aubergine lengthwise into 5 slices, but not quite right through.
2. Season the lamb and insert slices into each aubergine slit, together with some onion and mint. Brush sparingly with oil and loosely wrap each one in foil.
3. Place the parcels on the baking tray and bake for 45 minutes to 1 hour until the aubergine is tender through to the centre. Serve immediately.
