Hot Lamb Fruit Vegetables Main Course

Cooking Apples, chopped
fl.oz. Single Cream
pinch of Sugar
Preheat the oven to low. Slice the
aubergines and place in a pan with half the oil. Fry gently for 10
minutes turning halfway through. Remove from pan and
drain on kitchen paper. Keep hot
in the oven.

oil to the pan and cook the lamb for 5 minutes on each side (according to
taste). Remove from pan and keep hot
in the oven.
3. Melt the
butter in a saucepan and fry the onions and apples for 4 minutes until golden
brown. Sprinkle in the curry powder and continue cooking for a few minutes.
Remove half the mixture and keep hot.
4. Add the
stock, cream and chutney to the remaining onion mixture and cook
for a few minutes. Do not boil. Season with salt and sugar.
5. To serve,
arrange the aubergines around the outside of a large serving platter. Place
the meat in the middle and top with the reserved onion mixture. Serve the
