Indian Lamb Steaks HT MC Indian 30mins Serves 4 Hot Lamb Fruit Vegetables Main Course Eggless Ind India Asia Asian
Ingredients 450g/1lb Aubergines (eggplant) 6 tbsp Oil 4 Lamb Steaks Salt and Pepper 25g/1oz Butter 2 Onions, chopped 225g/8oz Cooking Apples, chopped 1 tbsp Curry Powder 6 tbsp Stock 120ml/4 fl.oz. Single Cream 2 tbsp Mango Chutney A pinch of Sugar
Instructions
1. Preheat the oven to low. Slice the aubergines and place in a pan with half the oil. Fry gently for 10 minutes turning halfway through. Remove from pan and drain on kitchen paper. Keep hot in the oven.
2. Cut each lamb steak in two and season with salt and pepper. Add the rest of the oil to the pan and cook the lamb for 5 minutes on each side (according to taste). Remove from pan and keep hot in the oven.
3. Melt the butter in a saucepan and fry the onions and apples for 4 minutes until golden brown. Sprinkle in the curry powder and continue cooking for a few minutes. Remove half the mixture and keep hot.
4. Add the stock, cream and chutney to the remaining onion mixture and cook gently for a few minutes. Do not boil. Season with salt and sugar.
5. To serve, arrange the aubergines around the outside of a large serving platter. Place the meat in the middle and top with the reserved onion mixture. Serve the sauce separately.
