Ingredients 1x 1.3kg/3lb Shoulder of Lamb Salt and Pepper 3 tbsp Soft White Breadcrumbs 3 tbsp Mint Sauce 1 tbsp Fresh Parsley, chopped 1 Garlic Clove
Instructions 1. Preheat the oven to 180C, 350F, Gas mark 4. Place the shoulder of lamb on a rack in a roasting pan and bake for 1 to 1 ½ hours according to preference.
2. To make the mint crust, mix the breadcrumbs to a paste with the mint sauce, adding the chopped parsley and the finely chopped garlic. Add the salt an pepper to taste.
3. Remove the joint from the oven and spread the mint mixture over the fat side, pressing it down well with a palette knife. Baste once with the pan juices and return to the meat to the oven 20 minutes.
The crust should be golden brown when the cooking time is up.
