Lamb with Green Beans HT MC 45mins Serves 4 Hot Lamb Vegetables Herbs Main Course Eggless
Ingredients 675g/1½ lb Green Beans, topped and tailed 50g/2oz Butter Salt and Pepper 120ml/4 fl.oz. Meat Stock 5 tbsp Oil 2 large slices White Bread 1 Garlic Clove, crushed 4 Lamb Steaks 2 tbsp Freshly chopped Parsley
Instructions
1. Break the beans into short lengths then melt the butter in a large saucepan, add the beans and cook for a few minutes to coat. Add the stock, salt and pepper and continue cooking gently for 15 minutes.
2. Meanwhile, fry the bread in half the oil until golden brown on each side. Keep warm.
3. Add the remaining oil to the pan and fry the garlic until soft then add the lamb and cook for 5-8 minutes on each side, according to taste. Season with salt and pepper.
4. To serve - stir the parsley into the beans and place the beans on a warmed serving platter. Arrange the croutons on top of the beans and place a lamb steak on each crouton. Serve hot.
