Lamb with Peas HT MC 90mins Serves 4 Hot Lamb Vegetables Herbs Stew Main Course Dairy Gluten Wheat Free Eggless
Ingredients 3 tbsp Vegetable Oil 1.3kg/3lb Boned shoulder of Lamb 1 Onion, chopped Juice of 1 Lemon 600ml/20fl.oz. Fresh Lamb Stock 675g/1 ½ lb Frozen Peas 2 tbsp Fresh Oregano, chopped Salt and Black Pepper
Instructions 1. Cut the lamb into pieces about 5cm/2 inches square. Heat the oil in a pan add the meat and fry until lightly browned. Add the onion and fry with the meat for a further 2-3 minutes.
2. Pour the lemon juice all over add the stock, oregano and seasoning. Cover and cook for 1 hour until the meat is tender.
3. Add the frozen peas and cook for a further 10 minutes. Serve hot.
