Oriental Lamb Noisettes HT MC 30mins Serves 4 Hot Lamb Vegetables Pan Fried Main Course Dairy Free Eggless
Ingredients 1cm/½ inch piece fresh Root Ginger, chopped 100g/4oz Broccoli Florets, sliced 100g/4oz Leeks, thinly sliced 100g/4oz Watercress, chopped 100g/4oz Mangetout, topped and tailed 8 Noisettes of Lamb 2 tbsp Olive Oil Salt and Black Pepper 2 tbsp Vegetable Oil 3 tbsp Lamb Stock 2 tbsp Soy sauce
Instructions 1. Brush the noisettes, with the olive oil and season with salt and pepper.
2. Warm a frying pan over a moderate heat, add the lamb and dry fry it for 2 minutes, or until browned underneath. Turn and fry for 3 - 4 minutes until cooked but slightly pink in the centre. Cover the pan and keep warm.
3. Meanwhile, heat the vegetable oil in a large frying pan. Add the ginger and the vegetables and stir-fry them for 3 - 4 minutes, until just tender. Add the stock and soy sauce to the vegetables and season to taste, then cover and cook for 2 minutes more, stirring occasionally.
4. To serve - place two noisettes on each plate and spoon the vegetables over and around them. Serve immediately.
