Hot Lamb Vegetables Pan Fried
Main Course Dairy Free Eggless
inch piece fresh Root Ginger, chopped
Broccoli Florets, sliced
Leeks, thinly sliced
Mangetout, topped and tailed
Noisettes of Lamb
tbsp Olive Oil
and Black Pepper
tbsp Vegetable Oil
tbsp Lamb Stock
tbsp Soy sauce
Brush the noisettes, with the olive oil and season with salt and pepper.
Warm a frying pan over a moderate heat, add the lamb and dry fry it for 2
minutes, or until browned underneath. Turn and
fry for 3 - 4 minutes until cooked but
slightly pink in the centre. Cover the pan and keep warm.
Meanwhile, heat the vegetable oil in a large frying pan. Add the ginger and
the vegetables and stir-fry them for 3 - 4
minutes, until just tender. Add the stock and
soy sauce to the vegetables and season to taste, then cover and cook for 2
minutes more, stirring occasionally.
To serve - place two noisettes on each plate and spoon the vegetables over
and around them. Serve immediately.
