Garlic Clove, crushed

x 1.2kg/2 ˝lb Shoulder Lamb
Dry White Wine (check Manufacture)
and Black Pepper
Medium Potatoes, peeled
Heat the oil in a flameproof casserole, add the onions bacon, garlic, spring onions, celery, carrot and parsley and fry
Add the whole piece of meat to the pan and fry over a high heat until browned on all sides. Reduce the heat and add the wine,
stock, mushrooms, salt and pepper,
cover and simmer for 1 hour.
After this time, add the potatoes and continue to cook, uncovered for 30 minutes. Serve hot.
