Venetian Lamb HT MC Italian 120mins
Serves 4 Hot Lamb Pork Vegetables Alcohol Main Course Eggless Gluten Wheat Dairy Free Italy Europe
Ingredients 1 Carrot, chopped 1 Stick Celery, chopped 4 Spring Onions, sliced diagonally 1 Onion, chopped 50g/2oz Streaky Bacon, cut into pieces 1 Garlic Clove, crushed 2 tbsp Oil 2 tbsp Fresh Parsley, chopped 1 x 1.2kg/2 ˝lb Shoulder Lamb 300ml/10fl.oz. Dry White Wine (check Manufacture) 50g/2oz Mushrooms, chopped 150ml/5fl.oz. Fresh Stock Salt and Black Pepper 450g/1lb Medium Potatoes, peeled and quartered
Instructions 1. Heat the oil in a flameproof casserole, add the onions bacon, garlic, spring onions, celery, carrot and parsley and fry until brown. 2. Add the whole piece of meat to the pan and fry over a high heat until browned on all sides. Reduce the heat and add the wine, stock, mushrooms, salt and pepper, cover and simmer for 1 hour. 3. After this time, add the potatoes and continue to cook, uncovered for 30 minutes. Serve hot.
