Cornflour 175g/6oz
Palm or Brown Sugar

a Vanilla Pod 480ml/16fl.oz.
Water A
pinch of Salt 175g/6oz
freshly grated Coconut Instructions 1.
Place the cornflour in a small cup and add a little of the water to make a thin
paste. 2.
Place the remaining water in a saucepan together with the sugar, vanilla and
salt, bring to the boil and stir until the
sugar has dissolved. 3.
Remove from heat, stir in the corn-starch mixture then return to the heat and
simmer for about 3 minutes, stirring constantly. 4.
Remove the vanilla stick and pour the mixture in a shallow tray so that the
liquid is a little less than 2.5cm/1-inch deep. Set aside to cool and set. 5.
Grate coconut flesh into a shallow dish, add a pinch of salt and mix
well. 6.
Once cold, cut the cornflour mixture into 2.5cm/1-inch squares and roll the
cubes in the grated coconut to
coat.
