Danish Soup Dumplings   Veg  HT  ACC  Danish  30mins

Danish name: Melboller

Serves 6    Hot Vegetarian Accompaniment   Denmark  Europe

75g/3oz Butter
50g/2oz Plain White Flour
120ml/4fl.oz. Boiling Water
2 Eggs, separated
A large pinch of Ground Cardamom


1. Melt the butter in a saucepan add the water and heat to simmering point.

2. Add the flour, beating well until it leaves the sides of the saucepan. Remove from the heat and allow it to cool a little.

3. Meanwhile, place the egg whites in a large mixing bowl and whisk until quite stiff. Set aside.

4. Add the egg yolks, salt and cardamom to the cooled flour mixture and beat until well incorporated.

5. Fold the stiff egg whites into the flour mixture then form into tiny balls, and drop into simmering water or soup and cook for a few minutes. Serve immediately.
