Fresh Crab and Watercress Sandwich

Makes 1 Sandwich        Cold   Seafood   Shellfish   Lunch Main Course   Teatime   Tea   Snack   Eggless

Ingredients
2 Thin Slices White or Wholemeal Bread
A Little Butter
100g/4oz fresh Cooked Crabmeat (white or brown and white meat mixed)
1 tbsp Cream Cheese
A squeeze of Lemon Juice
teasp Ground Paprika
Salt
1 tbsp roughly chopped Watercress

Instructions

1. Lightly butter one side of both slices of bread and set aside.

2. Place the remaining ingredients in a mixing bowl and mix gently but thoroughly.

3. Place on the buttered side of one slice of bread then top with the other slice of bread, buttered side down.

4. Cut into quarters before serving.

Also good made with ordinary cress or mustard and cress.
