Turkish Delight    CD  Confectionery  Turkish   35mins plus setting

Ingredients

The rind of 1 Lemon
The rind of 1 Orange
60ml/2fl.oz. Orange Juice
2 tbsp Lemon Juice
675g/1½ lb Caster Sugar
120ml/4fl.oz. Water
2 tbsp Powdered Gelatine
Extra Water (see recipe for amounts)
75g/3oz Cornflour
3-4 drops Rose Flower Water
Red Food Colouring
Icing Sugar

 

Instructions

 

1. Oil a 22cm/9-inch square tin,  line with clingfilm then oil the clingfilm. Set aside.

 

2. Place the rinds, juices, sugar and water in large heavy pan over medium heat and cook, without boiling and stirring constantly, until sugar has completely dissolved. 

 

3. Brush any sugar crystals from side of pan with a wet pastry brush then bring to the boil, reduce heat slightly and continue to boil without stirring, for 5-10 minutes or until a teaspoon of the  mixture forms long threads when dropped into cold water. If using a sugar thermometer it should reach 105C/221F.

 

4. Meanwhile, in a small heatproof bowl, mix the gelatine with 120ml/4 fl oz of extra water . Place the bowl over a pan of hot water and stir until dissolved. Set aside.

 

5. In another small bowl combine the cornflour with 120ml/4 fl oz of extra water and mix until smooth.

 

6. Add gelatine and cornflour mixtures to sugar syrup and stir over a medium heat until the mixture boils and and becomes clear. 

 

7. Add the  flower water and a few drops red food colouring, mix well then strain the mixture into the  prepared tin, spread evenly and leave to set for at least 4 hours.

 

8. Once very firmly set , peel off the clingfilm,  cut into 2.5cm/1-inch  square and roll in plenty of icing sugar.
