Ingredients 1 Vanilla Pod 675g/1½ lb Granulated Sugar
Instructions
1. Place the sugar in a large mixing bowl. Split the vanilla pod in half and scrape the seeds onto the sugar.
2. Cut the two halves into 12mm/½ inch pieces and add top the sugar. Mix well.
3. Transfer to a large jar and seal well. Store in a cool dry place for at least 1 week, shaking the jar every day.
Sieve the sugar as you use it, returning the beans and seeds to the jar and topping up with more sugar if you like. This may be repeated over 6 months or so, or until the flavour of the vanilla sugar weakens.
