Tin Sweet Condensed Milk

1. Place the butter and water in a
large saucepan and cook over low heat until the butter has melted.
2. Add the sugar and bring to the
boil, stirring constantly.
3. When boiling, add the condensed
milk, reduce the heat and simmer for about 15 minutes, stirring to prevent
sticking, until the right consistency is achieved (i.e. when a little is dropped
into very cold water, it hardens).
4. Remove from the heat and add the
flavouring of your choice (see below) if desired. Beat well for at least 5
minutes then pour into a shallow greased tray, mark the top into squares and
allow to set.
5. Once set and cold, life out and
break into bite-size cubes. Wrap in waxed paper to store.
The mixture can be flavoured with
vanilla, chopped walnuts, clove, cinnamon, lemon, orange, peppermint or ginger.
