Monterey Jack is a semi-hard American cows' milk cheese also sometimes referred to simply as "Jack".  Much of the softer types are only aged for one month. These have a mild flavour and light creamy colour with good melting properties similar to Gruyère. The aged versions, also known as "Dry Jack", have a firm texture and a sharp, fuller flavour, are more suitable for grating and used much like a strong cheddar cheese.
