Maple Syrup Day

17th December is National Maple Syrup Day. First used by native Canadian Indians, maple syrup has been popularised throughout the western world by North Americans who have been using it as a sweetener for centuries.

We're not sure why this date has been chosen to celebrate this sweet delight, especially considering that the syrup is harvested in the springtime. However, it could be that due to its long keeping properties, it was stored and used by the native Indians as an extra energy source during the winter months,  which is good enough reason.

 

The syrup is 'tapped' from the mighty Maple tree by means of boring holes into the trunk which, by the way, has no detrimental effect on the tree. Nutritionally,  maple syrup is a very pure ingredient with nothing ever being added or taken away in its processing (apart from water).  It contains , calcium, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc,  and good quantities of B complex vitamins, principally thiamine. Plus it's totally animal free making it suitable for vegetarians and vegans and is a great substitute for honey in most recipes.
