Calves Liver with Apple

Serves 4
Hot Offal Pork Fruit Herbs Main Course Gluten Wheat Free Eggless
Ingredients
50g/2oz Butter
2 large Apples, peeled cored and thickly sliced
450g/1lb Calves Liver, sliced
2-3 fresh Sage Leaves, shredded
Salt and Pepper
8 Rashers Bacon
Instructions
1. Preheat the grill to hot. Melt half the butter in a frying pan, add the apple
rings and sauté for 4-5 minutes on each side until golden brown. Transfer to a
warmed platter, keep hot.
2. Grill the bacon for about 3 minutes on each side until browned and crisp.
3. Meanwhile, place the remaining butter and sage in the frying pan and
heat until hot.
4. Season the liver with salt and pepper then add to the pan and sauté for about
2 minutes on each side.
5. To serve - transfer the liver to warmed serving plates, arrange the apple
rings and the bacon around the edges and pour any juices remaining in the pan
over the top. Serve immediately.
