Liver with Herbed Breadcrumbs HT MC 25minsServes 4 Hot Offal Herbs Vegetables Main Course Eggless Ingredients 675g/1˝lb Lamb's Liver 4 tbsp Vegetable Oil 1 tbsp Butter 1 Onion, finely chopped 1 Garlic Clove, crushed 100g/4oz Breadcrumbs 2 tbsp Freshly Chopped Parsley 1 tbsp Freshly Chopped Thyme 1 teasp freshly Chopped Tarragon 2 tbsp Sherry Vinegar Salt and Pepper Instructions 1. Thinly slice the liver and cut into 5cm/2-inch pieces. Set aside. 2. Heat the oil and butter in a large frying-pan, add the onion and garlic and sauté gently for 4-5 minutes, stirring from time to time. 3. Raise the heat a little then add the breadcrumbs and sauté for a few minutes until the breadcrumbs are just turning golden brown. 4. Add the herbs, vinegar, salt, pepper and liver and continue to sauté over a medium heat for 5 -8 minutes, turning from time to time, until the liver is cooked through and coated with the breadcrumb mixture. Serve immediately.
