Liver with
Mushrooms HT MC

Serves 4 Hot Offal Herbs Vegetables
Main Course Gluten Wheat Dairy free Eggless
Ingredients
2 tbsp Olive Oil
1 Onion, sliced
225g/8oz Fresh Mushrooms, sliced
450g/1lb Lambs' Liver, sliced
120ml/4fl.oz. Stock or Dry Sherry (or half of each)
1 teasp dried Rosemary Leaves, crumbled
Freshly chopped Parsley to serve
Instructions
1. Heat the oil in a large frying pan over medium heat. Add the onion and
mushrooms and cook for about 5 minutes, stirring from time to time, until the
onion is softened. Remove with a slotted spoon and set aside.
2. Reheat the oil in the pan, then add the liver and brown on both sides over a
medium heat.
3. Add the stock or sherry, rosemary and reserved cooked onion and mushrooms,
mix well then cover and simmer for10 minutes.
Serve immediately sprinkled with lots of freshly chopped parsley.
