Spiced Kidneys In Yogurt HT MC

Serves 4 Hot Offal Pork Bacon

Ingredients
4 Streaky Bacon Rashers
1 tbsp Plain Flour
Salt and Pepper
12 Lamb's Kidneys, halved and white core removed
2 tbsp Vegetable Oil
2 Shallots, finely chopped
1 heaped teasp Ground Coriander
1 heaped teasp Ground Cumin
175g/6oz Baby Mangetout
225g/8oz Mushrooms, sliced
120ml/4fl.oz. Stock
120ml/4fl.oz Plain Natural Yogurt
Instructions
1. Preheat the grill to hot, grill the bacon until well browned then chop and
set aside.
2. Meanwhile, place the flour on a plate, season with salt and pepper then add
the kidneys and turn to coat on all sides.
3.. Heat 1 tablespoon of oil in a small saucepan, add the kidneys and brown on
all sides over a medium heat. Transfer the kidneys from the pan to a bowl and
set aside.
4. Add the remaining oil, spring onions, coriander and cumin, stir-fry for 1
minute then add the mangetout and mushrooms and stir-fry for a further 2-3
minutes.
5. Add the bacon, kidneys together with their juices and stock to the saucepan,
mix well then bring slowly to the boil. Reduce the heat, cover and simmer for 10
minutes.
6. Remove the pan from the heat and allow to cool a little before stirring in
the yogurt. Serve immediately.
