Student Liver with Mushrooms    HT  MC  25mins
 

Serves 1     Hot Offal Herbs Vegetables Main Course Gluten Wheat Dairy free Eggless

Ingredients
1 tbsp Olive Oil
  Small Onion, sliced
50g/2oz Fresh Mushrooms, sliced
100g/4oz Lamb or Calves' Liver, sliced
120ml/4fl.oz. Stock or Dry Sherry (or half of each)
teasp dried Mixed Herbs
Freshly chopped Parsley to serve

Instructions

1. Heat the oil in a medium frying pan over medium heat. Add the onion and mushrooms and cook for about 5 minutes, stirring from time to time, until the onion is softened. Remove with a slotted spoon and set aside.

2. Reheat the oil in the pan, then add the liver and brown on both sides over a medium heat.

3. Add the stock or sherry, rosemary and reserved cooked onion and mushrooms, mix well then cover and simmer for10 minutes.

Serve immediately sprinkled with lots of freshly chopped parsley
