Lamb's Liver, cut into small cubes
teasp Cayenne Pepper
heaped tbsp Plain Flour
tbsp freshly chopped Parsley
for shallow frying
Wash the liver thoroughly under cold running water and pat dry on kitchen paper.
Preheat about 2.5cm/1-inch of oil in a frying pan to 180C, 350F. In a
medium bowl, mix together the cayenne pepper, salt and flour.
Roll the liver cubes in the flour to coat well on all sides then shake off the

drain on kitchen paper.
Transfer to a serving dish, sprinkle with the chopped parsley and serve
