Vegetables Pork Herbs Main course Eggless
Streaky Bacon, chopped
Button Mushrooms, sliced
tbsp Plain Flour
tbsp Lemon Juice
tbsp Fresh Parsley, chopped
Heat butter in frying pan or casserole and fry onions and bacon for 5 minutes.
Cut the liver into 12mm/½ inch wide strips and toss in the flour. Add liver to
pan and stir-fry for 4 minutes. Transfer mixture to warmed serving dish,
sprinkle with salt, pepper and grated nutmeg and keep hot.
Add mushrooms to pan and fry gently for 5 minutes. Add the wine, tomatoes and
cream and heat through for 5 minutes without boiling. Remove from heat and stir
in lemon juice and chopped parsley.
