Calves Liver Hot Pot HT MC 40mins Serves 4 Hot Offal Vegetables Pork Herbs Main course Eggless Ingredients 2 Onions, chopped 100g/4oz Streaky Bacon, chopped 50g/2oz Butter 100g/4oz Button Mushrooms, sliced 2 Tomatoes, chopped 450g/1lb Calves Liver 1 tbsp Plain Flour Salt and Pepper Grated Nutmeg 150ml/5 fl.oz. Stock 150ml/5fl.oz Single Cream 1 tbsp Lemon Juice 1 tbsp Fresh Parsley, chopped
Instructions 1. Heat butter in frying pan or casserole and fry onions and bacon for 5 minutes.
2. Cut the liver into 12mm/½ inch wide strips and toss in the flour. Add liver to pan and stir-fry for 4 minutes. Transfer mixture to warmed serving dish, sprinkle with salt, pepper and grated nutmeg and keep hot.
3. Add mushrooms to pan and fry gently for 5 minutes. Add the wine, tomatoes and cream and heat through for 5 minutes without boiling. Remove from heat and stir in lemon juice and chopped parsley.
