Curried Kidneys HT MC 55mins Serves 4 Hot Offal Vegetables Spices Main course Eggless
Ingredients: 450g/1lb Beef Kidney 1 Onion, chopped 50g/2oz Butter 1 Garlic Clove, crushed 1 tbsp Curry Powder 1 tbsp Plain Flour 150ml/5 fl.oz. Beef Stock 1 x 200g/8oz tin Chopped Tomatoes Salt and Black Pepper
Instructions
1. Prepare, wash and chop kidney into 12mm/½ inch cubes. Heat the butter in pan, add the onion, garlic and curry powder and cook for 5 minutes. Add the kidneys and brown on all sides.
2. Sprinkle flour over pan and cook, stirring, for 1 minute. Stir in the stock, tinned tomatoes and their juice, salt and pepper. Bring to the boil, stirring to break up the tomatoes, then reduce the heat and simmer gently for 40 minutes or until kidneys are tender. Serve with plain boiled rice.
