Garlic Clove, crushed
tbsp Curry Powder
tbsp Plain Flour
fl.oz. Beef Stock
x 200g/8oz tin Chopped Tomatoes
and Black Pepper
Prepare, wash and chop kidney into 12mm/½ inch cubes. Heat the butter in pan,
add the onion, garlic and curry powder and cook for 5 minutes. Add the
kidneys and brown on all sides.
Sprinkle flour over pan and cook, stirring, for 1 minute. Stir in the stock,
tinned tomatoes and their juice, salt and
pepper. Bring to the boil, stirring to break up the tomatoes, then reduce the
heat and simmer gently for 40 minutes or until kidneys are tender. Serve with
plain boiled rice.
