Devilled Kidneys HT MC English 20mins Devilled kidneys is a very traditional English recipe which was often served for breakfast. If you watched the recent TV program Hell's Kitchen on ITV, where Marco Pierre White used copious amounts of Worcestershire sauce and hot pepper, you may think this recipe is not for you. However below is a more gentle (and traditional) version which is absolutely delicious and won't blow your head off!
Serves 4 Hot Offal Pork Main course Eggless British England Europe
Ingredients 12 Lamb's Kidneys, halved and cored 50g/2oz Butter 1 tbsp Oil 1 tbsp Red Wine Vinegar 2 teasp English Mustard 1 tbsp Worcestershire Sauce Salt & Pepper Toast or fried bread and Bacon
Instructions
1. Heat the butter and oil in a pan and add the halved kidneys. Fry for about 8 minutes turning.
2. Stir in the vinegar, mustard, Worcestershire sauce, salt and pepper and cook for a further 2 minutes.
Serving suggestions: Accompaniments: Salad w/ Herb Vinaigrette, Bacon, Fried Bread, Grilled Tomatoes Dessert: Fresh Fruit
